Raspberry White Chocolate HEART Swirl Cheesecake

Every. Single. Valentines. Without fail, I make this raspberry white chocolate heart swirl cheesecake for my husband and I and Every. Single. Valentines. I remember why I'm so in love with this recipe. 😋

Ingredients:
1 Pre-Made Graham Cracker Crust
1 TBSP Sugar
1 1/2 tsp Corn Starch
1/3 Cup Cold Water
1 1/2 Cups Raspberries
1 1/2 PKG Cream Cheese (approx. 375g total)
1/3 Cup Sugar
1 Egg + 1 Egg White
1 tsp Vanilla
1 1/2 tsp Lemon Juice
1 Cup White Chocolate Chips
1/4 Cup Heavy Whipping Cream
Directions:
Preheat oven to 325 degrees.
Whisk together 1 tBSP sugar & cornstarch in a small pot. Then add cold water and raspberries. Cook over medium heat until it reaches a boil (stir frequently). Allow to boil gently for about 5 minutes.
Pour sauce into a fine mesh strainer and press through into a bowl underneath to remove seeds and create your raspberry sauce.Â
In your mixing bowl beat together cream cheese and sugar (either by hand vigorously or with a stand mixer) until mixture is fluffy. mix in the egg and egg white, vanilla, and lemon juice.
Melt white chocolate and whipping cream in the microwave in 15 second increments stirring after each until melted and smooth. add this mixture to the cream cheese mixture and blend. Â
Pour half of cheesecake mixture into your pre-made crust and drizzle 2 tbsp of raspberry sauce over top. Swirl slightly to give a marble effect to the inside of your cheesecake.Â
Slowly spoon the remainder of the cheesecake mixture overtop making sure to cover all of the raspberry sauce.
Fill a clean medicine syringe with raspberry sauce and place dots in a swirl pattern over the cheesecake. Take a toothpick and beginning at either the beginning or the end of the swirl run the toothpick through the centre of each circle not lifting your toothpick until you reach the last circle.Â
Bake for 40 minutes, then Turn off the oven and let sit in the warm oven for 5 more minutes. Remove from oven and allow to cool. Cover with lid that came with the pre-made shell and refrigerate about 5 hours or until fully set!

You can use either fresh or frozen raspberries for your sauce. You can make your spots bigger or smaller depending on the look you’re doing for, just make sure you leave space between each so they don’t run into each other!Â
