Gluten Free Christmas Bark (aka Christmas Crack)
I was so sick of missing out on this delicious Christmas treat simply because I was gluten free. So what better way to fix that than with a delicious salty twist - to substitute the crackers for ruffle chips! This is a salty and sweet combo you are sure to love, whether you're gluten free or not. And honestly, when I first tasted this my exact words to my husband were "this is the most delicious thing I've ever made."
So here we go! The recipe for Gluten Free Christmas Bark (aka Christmas Crack)

Ingredients:
1 cup of butter
1 cup of brown sugar
Approx 2-3 cups of regular chips (ruffled or plain are fine)
1 bag of milk chocolate chips
1 bag of white chocolate chips
Holiday sprinkles of choice
Directions:
Preheat the oven to 350 degrees F and line a cookie sheet pan with parchment paper
Arrange a layer of chips on the pan (overlap them slightly so the pan is completely covered but in one layer so each chip ends up with toppings on it)
Melt 1 cup of butter in a pan on the stove
Once completely melted, add your 1 cup of brown sugar and incorporate
Allow to cook over medium heat for 5-7 minutes (you want the butter to melt and the sugar to dissolve)
Whisk the mixture as it cooks until it becomes amber in colour and thickens (see video below)
Pour the mixture over the potato chips until coated and place in the oven for 5 minutes
Immediately top with an even layer of your favourite combination of chocolate chips and place back in the oven for 3 minutes
Remove the pan from the oven once the chocolate chips have melted and immediately spread the chocolate out until smooth over all of the toffee covered chips
Allow the pan to cool before placing it in the fridge to solidify (takes about an hour)
Break apart or cut into squares with a knife and there you have it!
This delicious Christmas Bark recipe can be kept in the fridge for a week or so, but honestly you'll probably eat it all before then!
