Easiest 3 Ingredient Cookies

If you love fresh homemade cookies but don't love complicated recipes with lots of ingredients that take a ton of time, then this recipe is for you!


3 ingredients

3 minutes prep

15 minutes baking time


These are my favorite 3 ingredient peanut butter cookies, and one thing I love is how versatile they are. You can pretty much substitute any nut butter/nut butter alternative** in place of the peanut butter, and use pretty much any type of sugar you want (granulated, brown sugar, cane sugar etc.). Plus they're gluten free!


**If you are substituting with a natural nut butter that separates, make sure the oil is very well mixed in before measuring out to ensure that you get the proper consistency in the cookie and that they hold together well.


Ingredients:

1 cup peanut butter

1/2 cup sugar

1 egg


Optional additional ingredient: approx 1/2 cup chocolate chips


Directions:

  1. Preheat oven to 350C

  2. Mix 1 cup peanut butter, 1/2 cup sugar and 1 egg in a bowl until combined

  3. Fold in chocolate chips if you are adding them

  4. Spoon onto a baking sheet (dip your spoon in water before scooping each ball of dough out of the bowl so it doesn't stick)

  5. Flatten with a fork in a cross-hatch pattern (see video - also dip the fork in water before this step so it doesn't stick)

  6. Place in the oven oat 350C for 12-15 minutes (keep an eye on the edges and once they start to brown they are ready)


And that's it!


So simple, so delicious, and so versatile.
