60 Second Microwave Mug Cookie

I'm the kinda gal that craves a little sweet treat after dinner every night. So instead of making a whole batch of cookies, we're just makin' 1! (shh don't tell my kids)
Here is my favourite recipe for a solo cookie on demand that comes together in a mug with just 8 quick ingredients and 60 seconds in the microwave.

60 SECOND MICROWAVE MUG COOKIE
Ingredients:
1 tbsp melted butter
1 tbsp granulated or cane sugar
1 tbsp brown sugar
1/8 tsp vanilla extract
pinch of salt
1 egg*
1/4 cup flour
2 tbsp chocolate chips
*Most mug cookie recipes call for just the egg yolk - I accidentally dropped the whole egg in and the cookie turned out delicious and fluffy. So if you don't feel like separating the yolk from the whites you totally don't have to!
Directions:
Spray mug with cooking spray or spread butter or coconut oil on bottom and sides
Melt 1 tbsp of butter in the mug
Add granulated sugar, brown sugar, vanilla, salt and egg and mix well
Add flour and whisk together until combined
Fold in your chocolate chips
Microwave for 60 seconds
Add toppings of choice (I love vanilla iced cream and whipped cream) and enjoy!
This cookie comes out with a half cookie half cake consistency, but totally hits the spot if you are wanting a quick sweet treat for one.
