3 Ingredient Yogurt Cake! Gluten Free Basque Cheesecake Dupe

I love cheesecake...like it's my absolutely favourite desert. I could eat it evry day of my life. But since being gluten free for the past 3 years I find it more difficult to achieve that frequency of cheesecake eating due to the gluten in the graham cracker crust.


But when I saw this recipe for a Basque Cheesecake dupe going around the internet, I knew I had to give it a go. It lived up to the hype for sure, but also reminded me of the German Pancakes that we make on the regular for breakfast.


You're definitely going to want to add some sweetness though - most people recommend using plain yogurt...I'm going to recommend using Vanilla. If that's sweet enough for you, then that's great! If not, you can add 1/4 cup sugar to the batter OR add honey/syrup/icing sugar and fruit to top it off. Or both if you have more of a sweet tooth.


Ingredients:

1 1/2 cup yogurt

4 eggs

5 TBSP cornstarch


Directions:

  •  Preheat oven to 350•F 

  •  mix all ingredients well with a whisk

  •  grease and line a loaf pan with parchment and pour in batter 

  •  Bake for 50-60 minutes until top starts browning and toothpick comes out clean

  •  top with fruit, honey, icing sugar, or whatever you want and enjoy!!
